They are floated and hand selected to ensure there are no impurities. They are put on raised beds for 14h to have no excess water left. Depulping happens the next morning, after a dry fermentation process for 36h in oak tanks. Those tanks are rinsed four times which floats most of the existing microorganisms away. After that the cherries spend 10h in plastic bags. Cherries are dried for another 20 days fully in the shade (just as a little impression - Esnaider and his co-workers move this coffee 10+ times a day to ensure even drying and its high quality, Esnaider jokingly says their coffees live a better live then they themselves)
