Sorting:Upon arrival, the coffee undergoes a floating process to ensure quality. The cherries are then immersed in water for two hours to clean and classify them. Fermentation:Next, the cherries undergo an initial anaerobic fermentation for 48 hours, followed by a 72-hour carbonic maceration process. During this stage, the mosto produced by the coffee is recirculated every 12 hours. To enhance the complexity of the cup profile, Edwin blends this mosto with pre-prepared mosto from Gesha and Sidra varieties. Drying: After fermentation, the husk and mucilage are removed through washing, and the coffee is sun-dried for 10 to 15 days, depending on weather conditions.
