This 100% Shiraz is produced using a traditional method that begins with base wine sourced from low-yielding, old vines in the Barossa Valley. The fruit was harvested by hand and fermented in Rockford’s historic slate open fermenters. The secondary fermentation occurred in the bottle to create the sparkling bead. The wine aged on its lees for 24 months before disgorgement. A small amount of rich, vintage fortified Shiraz was added as the liqueur d'expédition to provide the characteristic depth and sweetness. After disgorgement, the wine stayed in the bottle for 6 months of stabilization before release. Tasting Note: The nose is intense with aromas of blackberry liqueur, dark chocolate, and exotic spices. The palate is rich, creamy, and full-bodied, showing concentrated flavors of black plum and fruitcake balanced by fine bubbles and supple tannins. The finish is long and velvety with a savory, earthy complexity. Region: Barossa Valley, Australia Variety: Shiraz Rating: Not rated
