This will be the only beef purchase you need to make all year! With this side you will have a variety of cuts, chosen by you as you customize your own cut sheet. If you choose this customizable option, rather than use our Dreamers’ Ranch Standard Half Side option (where we do the cut sheet work for you) please note that you are responsible for the cuts and outcome of your half side, as well as the full hanging weight price which could range from 250-325 lbs depending on the animal. Any additional requests or services rendered by the butcher will also be your responsibility to request and will be charged accordingly (i.e., requesting beef patties). FAQ’s: STORAGE SPACE: This customizable half side beef requires 7-9 cubic feet of freezer space. Given that cattle come in all shapes and sizes, please note that we cannot guarantee an exact quantity of specific cuts or weights. HANGING WEIGHT: Our hanging weights range in size, but typically you can expect to receive a 250-325 lbs half side (meaning the whole animal hangs on average between 500-650 lbs). TAKE HOME WEIGHT: Your take home meat will weigh an average of 40%-60% of the hanging weight, depending on how you fill out your cut sheet and how much bone and fat is discarded by the butcher. For example, a 300 pound half side of beef will produce approximately 120-180 pounds of take home meat for your freezer.
