What to Expect: Price: $8.40/lb on the hanging weight Hanging Weight: Approximately 350 lbs per side. Additional Butchering Costs: Approx. $1.20/lb (depending on your preferences). Final Take-Home Weight: ~210 lbs of premium beef. Total Estimated Take-Home Cost (Beef + Butchering): ~$3300 per side Future-season pricing is subject to change based on cattle, processing, and operating costs. Dry Aged for 21-30 Days – Ensuring incredible tenderness and flavor. Custom Cutting Instructions:Once your beef is ready, we’ll contact you to complete a cutting instruction form. Customize your order with options like steak thickness, roast sizes, sausage, jerky, or organ meats. Organ pricing is $1.50/lb for those included in your side, with additional organs available for $4-$10/lb. Delivery Details:We deliver to four Okotoks/Calgary drop-off locations or you can come out and pick up from Black Diamond. Order by June 1 to guarantee your Side of Beef for Fall 2027. Limited availability means early reservations are essential to secure your share. When will I get my order?We are taking orders for the Fall 2027 list - first 10 orders will get their beef in Sept 2027. Why does it take time?Our beef is dry-aged and butchered only after a full grazing season to achieve the best flavour and tenderness. Because this is a seasonal harvest (we are small-scale and don't butcher year-round), orders are filled on a first-placed, first-filled basis. We also partner with a small local butcher who shares our commitment to quality and can process only a few beef each week, which means limited processing slots. Ordering early is the key to an earlier delivery. It takes a little planning, but it’s worth it - we put the same care and effort into these animals as you put into your family meals!
