We have to put your beef on our schedule and get your personal instructions on how you want your meat cut! PLEASE call to schedule your beef time slot and set a date for picking your order up directly from the butcher. 1/4 Beef by the Hang Weight - this means you get to specify your cut instructions with the butcher... like thinner or thicker steaks, smaller or bigger roasts, steaks or roasts on specific cuts? Price Options: $7.45/lb on the Hang weight, regular USDA butcher cut and wrap - you get to choose a lot of options either Bone-In or Bone-Out. $7.60/lb on the hang weight = Specialized cut options - a mix of bone-in and bone-out products, tomahawks, skirt steaks, specialty grinds, 1 steak in a pkg, and more... you can chose the Specialty cut option for $7.35/lb on hang weight = Custom non-USDA cut and wrap. Everything is cut, handled, and packaged the same, there just isn't a USDA inspector watching it the whole time and your pkgs will say "Not For Sale" and will not have the USDA stamp. What is the difference between 1/4 Beef by the hang wt and the 1/4 Beef Bundle? Both are Great ways to Fill your Freezer, you choose which one you prefer! Price and lbs will vary - Hang wt = more $ and more lbs! Avg price is between $1100 -$1440 for ~ 95-115 lbs. (Bundle = $1090 for 90 lbs) Cuts - you choose the way your meat is cut, there is a bit less variety of cuts, but you receive more of each cut (Bundle you can choose a variety of smaller cuts, sausages, & patties) You can not choose both bone-in & bone-out options by the hang wt unless you pay extra for specialty cuts - Specialty cut orders are $7.60/lb on the hang wt.
