The luscious sweetness of ripe apricots is intertwined with the creamy richness of a vanilla custard Danish. We explored her renowned 'Warehouse of Flavours' to a whiskey drawn from four unique casks that capture the full spectrum of Irish whiskey styles - Pot Still, Grain, and Single Malt. Two were fully matured in Oloroso and PX sherry casks, while the other two were finished in Oloroso and Pajarete casks. The result is a richly layered, perfectly balanced whiskey that epitomizes the forward-thinking spirit of modern Irish whiskey. Half + Heart suggestion: Irish Whiskey…Irish Beer! For our high/low pairing, of course, it’s none other than Guinness Zero - a firm favourite of ours. For something a bit juicier, check out Eight Degrees Brewery from Co. Cork and their Citra - a spritzy, tropical ipa. Other cool things about this bottling Pajarete Casks Pajarete is a classic fortified wine from Málaga, crafted from Pedro Ximenez and Moscatel grapes. Aged for a minimum of two years, it’s known for its thick, sweet character with notes of caramelised nuts, dried fruit, and citrus. When used to mature whiskey, these casks impart a warming dried fruit and citrus profile. Pot Still Whiskey Two of the four casks in this small batch are Pot Still Whiskey - a uniquely Irish style. Made with a minimum of 95% malted and unmalted barley (at least 30% of each) and no more than 5% of other grains, this whiskey is celebrated for its rich, oily texture and bold, distinctive flavour.
