Rustic Manchego made with a natural rind which allows the cheese to breath as it ages, creating more complex secondary flavors such as hay, almonds, brioche and pineapple. Texture- wise, this Manchego is more crumbly and smooth. This is one of the few Manchegos that is handmade with unpasteurized milk from a single herd of sheep and then aged with an unwaxed rind.
