Brewed by Yoshinogawa in Niigata Prefecture, this Junmai Daiginjo is a pure rice sake with no added brewer's alcohol. It is made from Gohyakumangoku rice polished to 40%, fermented with a brewery-proprietary yeast in stainless steel tanks, and aged several months before release. It has 15% alcohol, an SMV of +2 (neutral to slightly dry), acidity of 1.3, and is crafted under the guidance of a Toji from the Echigo Toji guild. Recommended serving temperature is chilled, around 10°C. Tasting Note: Aromas are intense and elegantly fruity, presenting specific notes of Asian pear, white peach, and a hint of lychee. The palate is full and smooth with a rich umami presence, offering flavors of melon and a subtle, clean rice character.
