Our Riesling is usually fermented to dry (no discernable residual sugars) and this wine has a floral (citrus flowers) aroma with citrus (lemon/lime) and green apple on the palate when young. Given time, it develops the toasty, honey flavours so typical of older cool-climate rieslings, with the classic cool climate acid backbone. Choose to drink early as a young refreshing wine or cellar to enjoy the fully developed flavours. The 2011 season was cooler than the previous year with average rainfall before harvest, so the grapes were much slower to ripen and accumulate sugars. This makes the wine a more European style Riesling. Our Riesling pairs well with Asian dishes, smoked sausage, and of course is perfect with seafood (oysters, prawns, lobster, shellfish).
