Chardonnay is sometimes called the winemaker’s grape because you can manipulate it in so many ways. Sometimes this means so much oak that the deliciousness of the Chardonnay grape is lost. But, if done judiciously, oak can combine with the fruit to make a beautiful chord of flavour and aroma notes. In 2014, we did an experimental trial of barrel fermented Chardonnay.
