What the wines from Essex County have is ripeness. We’re the warmest part of Ontario, with longest growing season. Lake Erie stays warm late into the fall letting us give the grapes a long ‘hang time’. This means our Cabernets (Franc and its offspring Sauvignon) achieve a ripeness that is the envy of the rest of Ontario, while keeping the acidic backbone of a great dinner wine. In our C2 blend the Cabernet Franc and Cabernet Sauvignon add to something more than the sum of their parts: an elegant, fruit forward red, perfect for beef and lamb. We wanted ripeness but also some backbone to pair with dinner, and we got it. 2016 may seem like an ‘old wine’ for those who buy at the liquor store, but serious red wines need time to come together, and C2 is just hitting its peak. $26.37 plus HST and 20¢ Bottle deposit ($30 all in)
