Winemaking After the harvest, the grapes undergo alcoholic fermentation in small steel vats at a controlled temperature, followed by a maceration that lasts about 15 days. Then, the malolactic fermentation takes place, entirely carried out in French oak barrels. The ageing then occurs over the next 18 – 20 months in large French oak barrels.
