TRY ME IF YOU LOVE: Unoaked Chardonnay ABV: 13.0% GRAPES: 100% Aligote TASTING NOTES: This is super-clean and full of lemon zing, Michele one of the winemakers describes this as “like drinking salty lemonade with a lick of limestone”. The wine was pressed with no sulphur added, with none added during fermentation also. Unfined, unfiltered it sees fermentation and elevage in stainless steel. PAIRS WITH: Try with shellfish or cured meat. SERVE ME: Serve chilled. Put in the fridge for a couple of hours. Partnering with growers who share their respect for the land and who are either organic or in conversion. The Aligote Dore comes from a single-parcel in the village of Ige in the Maconnais. Vines are in a sloped vineyard with marl and calcaire soils giving the wine a saline, citrus note.
