Will age very well across the mid-term.” About This Wine This Adelaide Hills Chardonnay is made from multiple clones grown in high-altitude, cool-climate vineyards. Fruit was handpicked into small baskets and basket pressed before fermentation in French oak barriques, with a portion new oak. Most barrels underwent spontaneous fermentation with indigenous yeasts, followed by frequent bâtonnage and natural malolactic fermentation. The wine matured in oak for nine months prior to bottling. Tasting Notes A complex and layered palate with chalky minerality, white nectarine and fresh lemon blossom. Toasty notes of macadamia nuts lead to a dry, textural finish supported by precise natural acidity.
