We wanted this to be a progression of last year's direct pressed Shiraz rosé. We took just the free run juice to provide a little more elegance, and allowed it to see oxygen for tw o days to bring some caramelisation. Serve it chilled. You don't have to but it's good. Strawberry on the nose. Tart Montmorency cherry. Sour berry acidity. Briney finish like a dirty Margerita. • 100% Shiraz grown & handpicked in Redesdale, VIC • Saignée of fruit as it was pressed on day of picking • Wild ferment • No sulphur or additives of any kind, at any stage • No fining or filtering • 6 months elevage in old oak barrels.
