How it tastes Lively, suave and mineral, with citrus, floral and herbaceous notes over a fresh, crisp palate with real weight and a flinty finish. The producer Michel Gayot grew up among the vines and describes a visceral attachment to the earth and what it gives when properly cared for. Chablis has a continental climate — cold winters let the vine rest, which is part of what gives the wine its tension. Food and drinking Good with seafood, salads and poultry & pork.
