How it tastes Refined, concentrated and structured, with wild red berry, cherry and raspberry and a hint of spice on a long, velvety finish. Vinified with wild yeasts and minimal s ulphur. The producer Gevrey-Chambertin is the largest wine village in the Côte d'Or. Les Astrelles takes its name from astre, a star, and les parcelles — the mosaic of small plots the estate farms, planted at 3,500 vines per hectare. Food and drinking Good with poultry & pork, risotto and cheese. Drinking well now, with a decade or more ahead of it. Serve at 14–16°C; serve slightly cool to highlight finesse and aromatic clarity.
