Juicy & Complex, with a red fruit profile of sour cherry & pomegranate, kirsch,rhuba rb, alpine herbs, red currant and baking spice. Destemmed fruit is transferred to open fermenters, with some foot trodding toloosen up some juice for wild fermentation. The ferment is punched down by hand,once in the morning, and once at night.
