How it tastes Plum and black cherry with rich mocha and a hint of oak, the tannins supple and silky through a long finish. Cool-macerated up to four days, then a week's fermentatio n with daily plunging. The producer Rockburn takes its name from the rugged, rock-strewn landscape of Central Otago. Sitting on the 45th parallel, it shares a latitude and a climate with Burgundy. Richard Bunton started it as a hobby in 1991, when almost nobody was planting there. Food and drinking Good with poultry & pork, red meat and cheese. Ready now, and will hold for a few years yet. Serve at 16–18°C. Show more
