The fruit was machine-picked early and quickly chilled to preserve the varietal characteristics of the grapes. The fruit was then pressed gently with minimal skin contact, giving the juice the softest pink colour. After pressing, the wine was settled & fermented separately to allow the varieties to express their unique characteristics best. The wine was filtered, blended & bottled early to retain the beautiful aromatics.
