How it tastes Dry, elegant and aromatic — citrus and apple with delicate florals, crisp and mineral with a mouth-watering finish. Twelve hours of skin maceration before pressing. T he producer Passerina is an old Marche variety grown almost nowhere else, its thick skins giving the wine an intense minerality. Giovanni Carminucci founded the estate in 1928; his son Piero now farms 45 organic hectares between Offida and Grottammare. Food and drinking Good with seafood, salads and poultry & pork.
