Halite Ruby 2025Ruby is a wine of energy, rarity, and life force – its fiery colour a reflection of what lies within. A jewel of a wine, made to shine chilled like a rosé. Vineyard The Sangiovese comes from the biogro certified Osawa Vineyard in the Mangatahi subregion of Hawkes Bay. Mangatahi is situated on the southern alluvial river terraces of the Ngaruroro river. The soils are sandy loam over alluvial gravels with ferrous content (‘red metals’). The Pinot Noir comes from the biogro certified Grava vineyard, farmed by Alistair and Karla, just south of Martinborough. The vines are grown on the terraces of the Ruamahanga river providing alluvial deposits making silt loam soils. Winemaking Hand-picked, destemmed to fermenter and inoculated with a pied de cuve (vineyard starter). The Sangiovese underwent a 3-day carbonic ferment before being pressed early and finished in stainless steel. The Pinot Noir was made much like a chardonnay. Whole-bunch pressed and naturally fermented in stainless where it remained on its lees until the wine was blended. Tasting Notes On the nose, Campari-like notes of cherry, ruby grapefruit, blood orange and clove. The palate bursts with bitter orange, tart morello cherry and salivating acidity, finishing chalky and dry. Unfined. Unfiltered. Vegan friendly.
