Pure Ibaraki sake crafted from Hitachi Nishiki rice This junmai ginjo sake is brewed exclusively with ingredients from Ibaraki prefecture. It uses Hitachi Nishiki—the only locally grown sake rice in Ibaraki—together with Ogawa yeast, Marufuku koji and the soft underground water from the Mt. Tsukuba watershed. To highlight the clean character of Hitachi Nishiki, a robust koji is employed to create depth and roundness.
