Akayane Distillery is an independently owned and operated distillery located in Ei, Kagoshima Prefecture, Japan. Established in 2006, it produces artisanal spirits using locally grown Satsuma imo sweet potatoes and crystal-clear, mineral-rich groundwater from Mount Kaimondake. The distillery utilizes both European direct-heating and Japanese indirect-heating stills for distillation, and experiments with diverse cask types for maturation, including ex-bourbon, ex-sherry, and Japanese Mizunara oak. A clear spirit made from the combination of Shochu (distilled from sweet potato) and infused with Juniper berries (from Bosnia and Herzegovina, and Macedonia) Made with only one botanical, juniper berries.
