The Domaine Comte Peraldi Cuvée Cardinal is a wine named in honor of Monsignor Mario Felice Peraldi, an ancestor who was the Governor of Civita Vecchia and owner of the estate in t he 17th century. This cuvee is crafted from old Sciaccarello vines, reflecting the unique characteristics of its granite soil. Grapes are carefully sorted and fermented in concrete tanks at 28°C, with a 15-day maceration. The wine is aged for 18 months, including 12 months in new barrels and the rest in barrels up to 3 years old. Tasting Note: The intense and fine nose gains in complexity and precision with oxygenation. It presents fruity (ripe red fruits, dried myrtle berries), spicy and delicately woody (pepper, cinnamon, vanilla) aromas. In the mouth, the attachment is clear, voluminous.
