Grapes: 95% Merseguera / 5% Chardonnay After a rigorous selection in the vineyard, each varietal is hand-harvested separately and whole bunches are pressed in a pneumatic press. Chardonnay is fermented in used 500L foudres with native yeasts, followed by six months in the same barrels on the fine lees without bâtonnage. Merseguera is fermented with native yeasts and aged in concrete tanks for six months. The two varieties are then blended and rested before a very light filtration, but no fining, before bottling. Captures the soul of the Valencia region of Spain. Aromas of fall fruits, apple, pear, melon with notes of citrus, raw almond and white flower. Pleasant minerally texture wrapped around the fruits with a dry finish. A wine for steak fish, pork or baked chicken. *Organic
