Pedro Ximénez is a sherry variety made from ripe white grapes with an exquisitely fruity smell and taste. The Palomino grape is a classic sherry grape. It is allowed to dry thoroug hly, resulting in a high sugar content when the sherry is made. Finishing in casks that previously contained this exceptional sherry gives the whisky full-bodied fruity flavours that provide for a mellow finish.
