The fruit is fully destemmed and ferments spontaneously with native yeasts in century-old, open-top wooden vats. Maceration lasts two weeks with twice-daily foot-treading. The wine ages for 12 to 18 months in used French oak barrels with 5% new oak, resting undisturbed on its fine lees without systematic racking.
