100% Pinot Noir grown on a 0.41-hectare parcel in upper Fixin, planted in 1973. The vineyard faces east to west on a gentle slope, with silt and clay soils over limestone. Grapes are carefully destemmed, retaining 65% whole berries. Fermentation begins with a cold maceration at 10°C in stainless steel tanks, followed by indigenous yeast fermentation with minimal punch-downs. The wine is aged for 16 months in oak barrels, 30% of which are new, and is racked once before bottling. Tasting Note: Ripe, fresh and cool aromas include those of spiced plum, newly turned earth and a whiff of the sauvage.
