The grapes are whole cluster pressed and fermented in neutral French oak, then aged for 8 months sur-lies. They are carefully hand picked, whole cluster pressed, and then barrel fermented in neutral French oak. The aging process lasts for 6 months on the lees with no additional fining or residual sugar.
