Grapes are harvested by hand in crates, sorted on a sorting table if necessary and conveyed directly to the pneumatic press. Pressing whole grapes for two and a half hours. The juice from stainless steel vats settles at 12 degrees overnight. Then the must is directly transferred to barrels to achieve alcoholic fermentation (traditional Burgundy vinification). 18 months ageing on lees, including 12 months in wood with 10% new barrels (Damy) and 6 months in stainless steel vats (30% Rousseau foudre 2018, 50% Damy 350L one-wine barrels, 10% Stockinger two-wine barrels and more). The name was inspired by the hill of Montrachet, nicknamed "Mont Chauve."
