AOC Mâcon RougeGamay, Pinot NoirClay-limestoneOrganic & BiodynamicHand harvested. Grapes are destemmed. Maceration for around 20 days with pump overs. Temperature controlled fermen tation. Left for 6 months in stainless steel tanks. Soft, dare we say it almost Rhone-esque strawberries, but with large pinch of spice and a little grip to keep it fresh. Best served really chilled.
