Producer Mermerus Vineyard was established in 1996, and occupies part of the eastern slope of Murradoc Hill on the Bellarine peninsula. Production is centred in our on site winery and grapes are sourced mainly from the estate, with a small amount of fruit from local vineyards being used in some years. Traditional labour intensive winemaking techniques aim to preserve the essential fruit character of the vineyard. Intense and delicate fruit characters are encouraged by hand picking and gentle handling in small lots, with partial indigenous yeast fermentation. Basket pressing of both white and red grapes allows maximum skin contact time and flavour retention. Tasting Note "This delicate Chardonnay displays lifted floral aromatics, with attractive primary fruit flavours of citrus, white peach and nectarine. Partial malolactic fermentation, wild yeast fermentation and extended lees contact in barrel have added richness and complexity, which is complimented by the subtle use of oak. " - WInemakers note
