AA Choy is a refreshing leafy green that tastes much like romaine lettuce but is not quite as crunchy. The vegetable is stir-fried with fresh chopped garlic or blanched and served with an oyster sauce topping. Handling Tip Selection AA choy has a uniform green color with unwilted leaves and no brown spots. The cut stem is jade green or white. Storage AA choy should be stored at 34°F - 36°F (1°C - 2°C) with a relative humidity of ninety-five to a hundred percent. The typical shelf life is ten to fourteen days. AA choy is sensitive to ethylene, a naturally occurring gas that regulates ripening. AA choy should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing. AA choy produces a low level of ethylene. AA choy is not sensitive to chilling injury and should be stored as cold as possible without freezing.
