Morihei is a Tokyo based company that is owned and operated by Mr. Oguro. At somewhere between 75-85 years of age (can never tell or ask..!) he is a great sharpener/polisher in his own rights and has been running his shop for over 5 decades in Tokyo servicing many locals with natural/synthetic stones as well as kitchen and woodworking tools. Kiyomitsu from Morihei is a budget-friendly line with the ease of maintenance and a good fit and finish. A small santoku like this gives a lot of utility on the cutting board without sacrificing too much of the length. We have found this shape to be a great addition to a set as it gives more chopping ability than utility/petty blades of a similar length. We recommend this blade to any cooks looking for a compact all-purpose blade on budget, or as a gift to a home cook using her trusty sets of paring knives used for EVERYTHING.
