Aceto Vivo is a lively, unpasteurized red wine vinegar. Many commercially produced vinegars fall short on flavor, balance and overall character. Much of this has to do with the fac t that they are overwhelmingly produced from inferior wine, heated to disable any live cultures, and bottled without any exposure to the softening and flavor enhancing influences of oak.
