While the brewery bakes under a blistering summer sun our thoughts turned to that most classic of summer beers; the Saison. Acrobat is our first interpretation of a traditional Sai son; dry, fruity and a little spicy with a high carbonation designed to refresh after long days out in the sun. We added Apricot during fermentation to enhance the aromatic esters from the classic Dupont yeast and a little tarragon in conditioning for a subtle hint of anise.
