These anchovies are of the similar anchovy family the Italians are using for pizza topping or salad mix in the form of fillet in olive oil. Anchovies are considered as having the h ighest nutritional value among forage fish. Their bones are soft and post no threats to our furry friends. World of Bean air-dried anchovies come in two sizes, the larger size is almost the length of the palm (very seasonal), while the smaller size are up to 12cm in length. Anchovy above 12cm will all be gutted prior to air-drying to avoid possible bitterness. Default shipment will be the small size anchovies.
