Handcrafted and brewed in small batches - without additives, heavy filtration or sulphites. Each batch is slightly different, each bottle is individually numbered. Made from 90% lo w-polished Carnaroli rice. Fizzy - dry with citrus notes. Batch of 270 bottles. Keep in a cool and dark place, serve chilled. As our sake is unpasteurised, it continues to develop in the bottle. For slow development, store in the refrigerator (ideally < 5 °C). This keeps the taste stable for 6-12 months. Even after this, our sake remains enjoyable, usually with a softer, mellow profile. If you have received our sake by post, leave it to rest in the fridge for a while - it is then ready to drink when chilled. Ingredients Water, rice, koji.
