This is a gluten-free flour blend designed to be used in place of light, whole-wheat flour. It weighs the same as bread flour so it can be used cup for cup. It utilizes our excelle nt wholegrain blend of ancient grains but has a higher percentage of rice flour than our other products, giving it a lighter color and flavor. Our products are all designed to lend themselves to vegan baking. Most gluten-free flours were a total flop when used in vegan recipes. Our goal was to make lovely, wholegrain products with excellent texture and flavor that stay moist even without eggs! This flour is ready for bread making. For use in a bread machine, we recommend adding 1/2 tsp of xanthan gum per pound of flour.
