The difference lies in the range in quality, umami, price, and sometimes all three. We ensure quality by only sourcing from Hokkaido, when they are at their largest and at the peak of their life cycle to ensure a saturated sweetness. The waters of Hokkaido provide our premium Ama Ebi. They are flown in directly whole, juicy, fresh, and have a luxurious and robust sweetness. Knowing if Ama Ebi Is High Quality or Not One of the biggest factors in knowing whether you’re purchasing quality Ama Ebi Sashimi is whether or not the shrimps’ heads are pre-removed. Do not invest in Ama Ebi if the does not come completely intact. According to the industry’s ecology, lower quality Ama Ebi will have their heads removed after caught and before sold to a fishmonger because it cannot be qualified as Sashimi. Frozen, prepacked Ama Ebi are inherently lower quality. Many merchants freeze their Ama Ebi that’s in stock because it is easier to store and keep longer. When the heads are not intact, it makes them easier to store frozen, as well. Tips from Us The shell of Hokkaido Ama Ebi is both fragile and soft, making it easy yet messy to peel. During the peeling process, we highly recommended that you soak the Ama Ebi in cold water, ice water is even better, to make it easier. Soaking Ama Ebi in cold water also makes the meat more elastic and sweeter. The entire peeling process should be done in the ice water. Do not just soak the Ama Ebi after it has been peeled.
