The Amazon chilli originates from the fertile Amazon basin of Colombia, one of the world's richest natural reserves and the ancestral home of hot chilli peppers. It belongs to the Capsicum frutescens species — the same family as Tabasco — and shares that pepper's fruity character and sharp acidity, but with considerably more heat. At 9/10 on the Scoville scale (50,000–70,000 SHU), this is a genuinely powerful chilli. What makes it distinctive is the harvest timing: the peppers are picked just before full ripeness, which accounts for their unusual pale yellow colour and preserves a bright, clean fruitiness that darker, fully ripe chillies lose. The Amazon chilli works well wherever concentrated heat and fruit-forward flavour are needed. It brings life to sauces, soups, stews, and dips, and pairs particularly well with exotic and South American-style dishes. It is equally at home rubbed onto meats or fish before cooking, stirred into marinades, or added to stocks and broths. A little goes a long way — this chilli builds heat progressively during cooking, so the timing of when you add it determines how fierce the finished dish will be.
