AMCHUR is native to India. It is the ground powder of the green, unripe mango. It has a fruity, sour flavour and is mostly used as a souring agent. Amchur is a good substitute for lemon juice, as it has naturally occurring citric acid. It also acts as an enzymatic tenderizer in marinades for meat and poultry. It reminds me of fun dip.
