Limarí, Limarí Valley GRAPES: 100% Chardonnay APPEARANCE: Bright, crystalline yellow AROMA: This wine displays multiple layers of white flower and pear aromas, plus predominant mineral and flint notes. PALATE: Very refreshing, with an excellent combination of structure and minerality, with a long finish, attractive salinity, and freshness. FOOD PAIRING: It goes excellent with grouper fish, sesame seared tuna, lobster bisque, New England clam chowder, scallops au gratin, seafood paella, as well as with quail, corn soup, pumpkin soup, salmon-filled ravioli and pasta with light creamy sauces. SERVE: 12°C Marcelo holds a Degree in Oenology from the Catholic University of Chile and has developed a successful career at Viña Concha y Toro, where he is now the Technical Director. He has been in charge of the Casillero del Diablo line since 1998. The following year, he took on one of the most prestigious and traditional brands in Chile: Marques de Casa Concha. When taking on this series, Marcelo Papa implemented technical improvements in the agricultural and winemaking techniques, which significantly enhanced the quality of Marques de Casa Concha, making it a highly sought wine around the world, which looks to convey great concentration and character of the grapes from traditional vineyards. He has also left his seal on the Maycas del Limarí Super Premium project, a winery that he has led since it began in 2005. According to international critics, his biggest professional achievement has been the signature touch he has managed to imprint upon all of his products, whose high scores are proof of his ability to make wines with a big personality and a sense of origin.
