ANCHO CHILI PEPPERS are dried poblanos chilis. They have a sweet, slightly smoky flavour, with a mild heat. They are used extensively in Mexican Cuisine, and make up one third of t he "holy trinity" of chili peppers used in mole sauce. These chilis can be rehydrated or left dry and ground into a powder.
