Anthill is a daring and celebrated fresh goat chèvre, created in collaboration with renowned chef Jock Zonfrillo. This one-of-a-kind cheese is lightly rolled in lemon myrtle herbs and topped with Native Australian Green Ants, which originate from far North Queensland and are sustainably farmed under license by First Nations People. The cheese itself is wonderfully creamy and light, while the Green Ants (flavoured with kaffir lime and lemongrass) add a tangy, sherbet-like pop that contrasts beautifully with the earthy lemon myrtle. It’s unorthodox, but perfectly balanced – a sexy, dynamic cheese that Cathy Stange herself has praised for its great flavour.
