Grown on clay and grey marl soils in the hills of Gubbio at 550 metres above sea level, it comes from old vines (60–80 years) that bring depth, texture and natural balance. A complex field blend of Trebbiano Toscano, Malvasia di Candia, Malvasia Lunga Bianca, Malvasia Istriana and Moscatello, Ambratile is made from the ripest bunches of each vineyard. Spontaneous fermentation on the skins for 12 days, minimal sulphur and no filtration are followed by extended ageing in vitrified cement, allowing the wine to settle and express itself without polish. Deep amber in colour, the wine shows impressive complexity, with notes of dried citrus, chamomile, ripe banana and persimmon, alongside wild herbs and subtle spice. The palate is structured and confident, defined by fine but firm tannins, savoury depth and a lingering saline finish that brings both tension and satisfaction.
