The base is the same slow, two-step ferment as every UTOPIA vinegar — 12 months as cider in neutral oak, then another year turning to vinegar the original Orleans way. What's diffe rent here is what happens after: a maceration of fresh raspberries, folded into the finished vinegar in a small, limited batch, adding a bright, jammy top note over the base's natural depth.Unpasteurised, unsulfured, only coarsely filtered.
