When growing apricots, farmers must pick unripe green fruits in early summer to reduce the weight on the branches and yield more delicious ripe fruit. As we always try to do, we found a way to make use of this unripe byproduct to make something truly delicious for you! Inspired by Japanese umeshu spirit, our rendition substitutes traditional ume fruit with green apricots from our local friends at K.B. Hall Ranch and Apricot Lane Farms. The result is something so good you absolutely have to try it for yourself!!
